Kathy's Foolproof Chocolate Cake

This Chocolate Cake Recipe looked so delicious and it came from such a fabulous blog-spot that I have been reading which is full of interior decorating idea's, great website links, yummy looking recipes which I intend trying and I am sure that Leecaroline won't mind that I am reviewing what I consider A Golden Two Thumbs Up Blog called Blooming Arts by Leecaroline http://leecarolineart.blogspot.com/. I tried to find her name on her profile but this is the only name I could find, so not sure if it Lee Caroline or Caroline Lee. Leecaroline is a professional artist and her art work is simply breathtaking. What I love about Leecaroline is that is apparent at her very beautifully set out blog spot that as an Artist that she is a sharing caring lady who loves nothing more than to point out great artists web pages , Etsy sellers and more. Ingredients:

  • 2 cups of granulated sugar
  • 2 eggs
  • 1 cup of yogurt or milk
  • 3/4 cup cocoa
  • 200 grams soft butter
  • 2 teaspoons baking soda
  • 1/2 teaspoons vanilla essence
  • 1/4 teaspoon salt
  • 3 cups self raising flour
  • 1 cup coffee (strong) - you can use instant coffee
Method:
  • Put all ingredients into a food processor and mix (If by hand use a large bowl and electric beater), mix until all ingredients are combined.
  • Bake for 1 hour and 15 minutes in the centre of the oven at 160 degrees Celsius or 320 degrees Fahrenheit .It is important to check after one hour with a skewer as sometimes it can cook in an hour depending on your oven.
  • Allow to cool in the tin then turn out onto a wire rack to cool further.
  • ice with chocolate icing or pour over hot chocolate sauce/fudge and serve immediately.

Oh I must add, as an extra special cake you can cut it in half and fill it with drained tinned black cherries and  fresh whipped cream.  Ice with chocolate icing and curls of grated chocolate and you have a quick and easy Black Forest Look a like and taste better cake :) There is nothing you cannot do with this recipe.

The cake will store for a few days if kept in the fridge.  Enjoy!

    I just want to thank you soooo much for posting about my blog on your own blog. You have been so kind and considerate and thank you so much for the comments about my art. My name is Lee Dewsnap, Caroline is my middle name. I set my blog up only a few months ago and didn't quite know where I was going with it initially so my name set up could have been thought about a bit more...I think LeeDewsnapart sounded
    strange, Leecarolineart sounded prettier.

    My blog is running away with me, so many ideas, so many talented people in the world and I still have to find time to paint as well as post :)

    I will be sitting down with a hot drink later today and perusing your own blog, especially the art work.
